Super easy low carb weekday meal! I bought these chicken meatballs without antibiotics and gluten-free (yay) at Whole Foods. Just poured a jar of organic marinara sauce (I always look for lowest sugar) over meatballs. Baked in convection oven at 350 degrees. The meatballs are already cooked so bake long enough to warm them. Remove from oven and cover with low-fat mozzarella. Return to oven, up temperature to 400 degrees and bake until cheese melts and browns. This is a great dish to satisfy when you are craving something rich without all the extra calories. Plus, reheats well for leftovers. Enjoy, my dogs and I did!
